Baked Egg Breakfast


I was very admittedly a waste of space New Year’s Day.  Literally paid the gravity bill for 24 hours.  Completely useless.  Plants are more functional than I was  You get the point.  While I may have been slightly overserved on NYE, I was ravenously hungry in the morning.  Baked egg cups have been making their triumphant appearance in blogs and magazines and I now know why.  Easy, healthy and delicious, these egg cups with oven roasted ham, tomato wedges and feta cheese served on a bed of spinach definitely hit the spot.
